Giant Italian Parsley
Giant Italian Parsley is also known as flat leaf parsley, Giant of Italy and and Italian Giant. This broad leaf variety is prized for its robust flavor and dark, glossy leaves. Chefs prefer the flat leaf variety for its strong flavor and fresh scent. Giant Italian Parsley is a biennial that often acts as an annual in Hawaii's climate. Parsley is easy to grow, but has a few specific needs that must be considered. Parsley thrives in full sun, but benefits from afternoon shade in very hot and dry areas. Roots must be kept moist and well drained and will rot in too much water. Poor, dry soils will produce a parsley with a very strong and bitter flavor and would benefit from digging in a well rotted manure or finished compost.
Seeds are slow to germinate and can take 14-21 days to sprout. Keep seeds near the surface of the soil, about 1/8" deep, with a fine layer of peat moss covering the seeds, and keep moist. Plants can be slow to grow, but once they are established they are vigorous and strong. Plant into the garden when there are 7 to 9 true leaves and roots are well established, but not bound. Plants thrive in full sun and well composted, moist, well drained soil.
